Nutritionist, Founder
Celeste McCarthy founded Protea to offer integrative, patient-centered care. With an M.A. in Literary Studies and a certification from the Institute for Integrative Nutrition, she specializes in personalized nutrition plans supported by advanced diagnostics, including the InBody scale and metabolic testing. Celeste is also a certified yoga teacher focusing on Yoga Nidra. She enjoys hiking, running, practicing yoga, and spending time with her family.

Lexilyn Elliott
Nutritionist
Lexilyn Elliott is a Certified Nutrition Coach through the National Academy of Sports Medicine and holds a Dietary Management Certification from Cincinnati State Community College. She is pursuing a B.S. in Public Health and a Health Education Specialist certification. Lexilyn emphasizes science-backed, practical nutrition and enjoys weight training, dancing, paddleboarding, reading empowerment books, and time with her two cats, George and Sam.

April Cole
Nutritionist
April is a compassionate holistic health practitioner with nearly 20 years of experience bridging conventional and integrative medicine. Beginning her career as a Medical Assistant and earning her Bachelor’s of Science in Nursing from Grand Canyon University in 2011, she later turned to holistic approaches after struggling with chronic illness and burnout. Through whole foods nutrition, Clinical EFT, yoga, mindfulness, and Eastern medicine, April found deep healing and renewed purpose. Her personal transformation led her to pursue holistic coaching, completing the Health and Wellness Coaching program at the Southwest Institute of Healing Arts in 2021 and earning her National Board Certification (NBC-HWC) in 2022. April specializes in sustainable weight loss, balanced blood sugar, stress management, and energy optimization. Her approach empowers clients to build lifelong habits that nourish both body and mind—without restrictive dieting. In her personal life, April enjoys time with her husband and dog, and practices daily meditation, yoga, Qigong, and energy psychology.
